I was excited to try these Rip Van Wafer Cookies from Costco, expecting a perfect blend of crispy wafer texture and rich dark chocolate. I also appreciated that they’re both low in sugar and vegan-friendly. Unfortunately, they didn’t quite live up to my expectations in terms of taste. Read on to find out why!

I found these in the snack section at Costco, near the RX Bars and the Welch’s Fruit Snacks. The item number is 1716780.
Taste
I wouldn’t recommend these at all, I was really disappointed by them. The thing I dislike most about them is that they taste strongly of artificial sweeteners and leave a lasting bitter taste in your mouth. The wafer itself is really bland tasting.
I also don’t love the texture of the wafer, it kind of tastes like Styrofoam/cardboard that disintegrates in your mouth. The dark chocolate flavor in the middle is the best part because it’s the only part of the wafer that has flavor but it’s not amazing and doesn’t mask the artificial sweetener taste.
Cost
The bag contains 24 individually packaged 22-gram wafers and costs $14.99 Canadian. That’s about 60 cents per wafer which doesn’t seem horribly expensive, but after trying them I wouldn’t pay that again for them.
Convenience
The best before date on the wafers is 10 months from when I got them at Costco. Each wafer is individually packaged and then the bag also reseals to help keep them fresh.
They’re easy to share with others or pop in your lunch bag or backpack since they’re individually wrapped. Since they’re low in sugar they’re a nice option for individuals who are really watching their sugar intake.

One wafer contains 110 calories, nine grams of fat, 10 grams of carbohydrates, five grams of fibre, two grams of sugar, one gram of protein and 10 milligrams of sodium. That’s not a ton of calories, carbs or sugar but the amount of fat for the wafer is pretty high considering they’re not very big.
Ingredients
The ingredients list is pretty short but I’m really disappointed to see palm oil as the first ingredient! The wafers use stevia leaf extract to help sweeten them and have regular sugar in the chocolate filling. These contain wheat and may contain milk, soy, eggs and tree nuts.

Nutrition: 4/10 (Not exactly healthy but low in sugar).

I tried the Costco Rip Van Wafer Cookies and totally agree with your assessment of them. I was thrilled that they just had 2 g of sugar but they taste bitter and horrible. I wish I had read your review prior to buying them. None of my family likes them.
