Costco bakery nailed it with these Kirkland Signature Raspberry Crumble Cookies!
Today I’m reviewing the Costco Kirkland Signature Raspberry Crumble Cookies. I’m a big cookie fan and enjoy the other cookies I’ve tried from the Costco bakery.
Other cookies I’ve tried from the Costco bakery are the Costco Kirkland Signature Peanut Butter Cookies, Costco Kirkland Signature Ginger Cookies and the Costco Chocolate Lover’s Cookie Pack.

Taste
These Costco raspberry cookies are delightful. They’re like a butter shortbread cookie, soft, slightly sweet and crumbly. There’s a delicious, sugary, flavorful raspberry jam in the middle that pairs perfectly with the buttery soft cookie.
To top it off there’s a light dusting of powdered sugar on top. Together all of these components create an amazingly indulgent and delicious cookie. Here’s a tip: microwave your cookie for a few seconds to make the jam extra gooey and the cookie slightly warm.

The raspberry crumble cookies at Costco cost $9.99 Canadian for the pack of 12 cookies. This is more expensive than the Ginger Cookies or Chocolate Lover’s Cookie Pack that has 24 cookies.
Convenience
These are perfect for the holiday season. The best before date is five days from the date these were packaged. I have frozen my raspberry crumble cookies and they freeze just fine.
The Kirkland Signature Rapsberry Crumble Cookies are perfect for a cookie tray or dessert platter. They’re great for individuals who don’t like chocolate cookies or have a sweet tooth for shortbread-like cookies.

I absolutely fell in love with these cookies, & was so disappointed when I found out that they were seasonal. Being an avid baker, I looked for a copycat recipe, and now make my very own raspberry crumble cookies, they are delicious! Identical to Costco’s recipe..

Yes I was in the Laguna Niguel store and the man in the bakery said they were discontinued. I never understood why they thought these were seasonal. They’re so delicious that I crave them. Wish they woujd bring them back.

The price here in Florida and also in Colorado has now increased to $11.99, if they were served in a restaurant they’d probably be $5.00+ each.
Don’t overlook the breakfast pastries either, they have Cherry, Cheese, and my favorite Almond two four packs are $11.99
