Delicious dip! Perfect for NYE at home.

Something has happened that hasn’t happened before in the history of Costcuisine. I bought a product from Costco intending to review it, ate the product and completely forgot to review it. It took me going to Costco today and seeing it in the store to remind me that I haven’t reviewed this deliciousness. Today I’m reviewing the Costco Rojo’s Black Bean 6 layer dip. This can be found in the refrigerated section at Costco and the item number is 1440644.
Taste
This is delicious! This is definitely a must buy. There’s six layers, black beans, guacamole, sour cream, salsa, creamy salad, cheddar and cotija cheeses. Each layer blends so well with the other layers and you get this delicious, flavorful, creamy, meixcan style dip. If you don’t like a lot of spice or heat, this dip is for you, it’s way more creamy and cool tasting that spicy. It’s amazing for nacho chips, vegetables or even put on tacos or quesadillas.
Cost
I paid $12.99 Canadian for the twin-pack of dips.
Convenience
The best before date is about two weeks from the date we purchased this. Even after opening the container stays fine in the fridge and we ate it for a few days after opening it and it tasted great. This is perfect as an appetizer with some nacho chips!
Nutrition
Two tablespoons is 40 calories, two and a half grams of fat, one gram of fibre, one gram of sugar, one gram of protein, 160 mg of sodium and three grams of carbohydrates. It easy to eat like ten tablespoons of this stuff but the calories are worth every bite.
I wouldn’t hesitate to buy this dip again. Sean and I loved it and my parents also bought it and really loved it as well. This is a crowd-pleaser and perfect for New Years Eve at home this year.

What are you doing for New Year’s Eve this year?
I bought it last week for a celebration of life gathering after attending a funeral for a family member. I just saw it is on the top of a recall list for possible Listeria contamination, where 26 people have fallen ill and 2 people have died. So far nobody that I am aware of who ingested it at our function has become severely ill, but incubation period is 1 day to 10 weeks, (yes, 10 weeks). That means I have to live in fear another 9 weeks that this food item I purchased from Costco isn’t going to make us all severely ill or even kill us. Thanks to the manufacturer in California, RIZO LOPEZ FOODS for NOT following strict guidelines and preparation protocols laid down by the health department regarding dairy products, we are now facing a major recall and multiple outbreaks of a potentially deadly disease in several states, right?
Yes! Heat at 450 degrees for about 15 min., it will be a gooey mess! Enjoy!
bought this 2 weeks ago at the London, Ontario store, went moldy within 2 weeks. wouldn’t buy this again for any price. this is the 2nd time we bought it, first time, loved it, but this time had to throw both packages into the garbage. terrible………
I was buying this dip x3 double packs at a time through Covid winter! The dates on ours are usually 4-8 weeks and they store in the back of the fridge beautifully. Easy taco salads, filling and even if I eat a scant 1/3 of a container, the black beans don’t spike my diabetic blood sugar. With so many non-diabetic friendly foods in Costco (they taste awesome so I understand!) I hope this sticks around. WINNER!
Great and low carb. I bought it last week but unfortunately today there was none in the Frederick MD store. Hope it is not one of those Costco “I loved it but Costco does not sell it anymore”.
Can you freeze it?
I haven’t tried freezing it! If you do be sure to report back!
Yes, I have done so. You may have a some water in the bottom after thawing, but I just discard the extra water and it is just fine!
