The Kirkland Signature Mini Cakes are one of Costco’s newest bakery items! The flavors change every few months and so far I’ve tried and reviewed the raspberry mini cakes and the carrot mini cakes. My local Costco is now carrying pineapple coconut mini cakes and I’m excited to try this tropical flavor that seems perfect for summer!

Taste
The texture of the mini cakes is extremely moist and crumbly. We didn’t try them until the day after they were packaged so that might be why they seemed so oily. The actual cake portion has a pretty nice flavor, you can taste the pineapple but there’s also a lot of coconut flavor and texture.
The shredded coconut seemed to sink and settle at the bottom of the cakes, so the top was less coconutty, but the bottom was very coconutty. I do wonder if the oiliness of the cake is from the coconut. The cake is fairly sweet and slightly artificial tasting but still good.
The frosting is not good and is the reason why I wouldn’t buy these again or recommend them. It’s too sweet and has a very artificial pineapple flavor and very little coconut flavor. It’s not at all tasty and I didn’t want to eat more than one bite of icing. On top of the icing there’s a streusel and chunks of coconut that add a bit of texture.
Cost
The mini cakes cost $12.99 Canadian. That’s for six large mini cakes which are similar in size to the Kirkland Signature Muffins. This is a dollar cheaper than six of the Kirkland Signature Cinnamon Roll Mini Cakes.
Convenience
I would try to eat these as soon as possible or freeze them right away because we left them out for a day and they were already turning soggy and quite moist. The best-before date listed on the packaging is five days from when they were packaged but I think that might be too long to leave them out.
These would be fun to serve at a summer barbecue, potluck or party if they tasted a bit better! I love the idea of pineapple coconut desserts and cakes during the summer months but they have to taste good.

One-third of a pineapple coconut mini cake contains 360 calories, 21 grams of fat, 42 grams of carbohydrates, one gram of fibre, 30 grams of sugar, two grams of protein and 200 milligrams of sodium.
That’s a lot of calories, fat and sugar for only one third of a cake! I think a lot of people would probably eat half a cake in one sitting.
Ingredients
The ingredients list has all the unhealthy things you’d expect to see in a store-bought cake like sugar, canola oil, artificial flavors, food coloring, palm oil and additives/preservatives. The cakes contain real crushed pineapple, shredded coconut and pineapple juice though which is a positive!
There are milk, eggs, wheat and sulfites in the cakes and they also may contain tree nuts, peanuts, soy and sesame.

Walk on by!
The cake itself is pretty good but quite oily. It’s too bad the icing is so awful. I can’t recommend these or say I’d repurchase them. My parents also tried them and didn’t enjoy the icing.

I love sweet things, but these are too sweet. Like yousaid the cake part is tasty, but the icing is too sweet.
The cake part was nice but I do agree with you, the frosting was way too sweet and I normally love a sweet frosting.
Costco says these sell well and have few returns.
